Research Progress on the Saponins of Tomato

Abstract: Saponins have been becoming the focus of research because of their activities on physiology and pharmacology in human body. Tomato is the most commonly eaten vegetable in our daily life. In addition to the well-known main active component:lycopene, tomato also contains high content water-soluble saponins. .At present, there is few domestic research bout tomato saponins. This paper mainly reviews the international research progress from 1970s on tomato saponins.
