Physiochemical Properties and Oxidation Stability of Phytosterol α-Linolenate

Abstract: Physiochemical properties, fat-soluble property, crystallization temperature, and oxidation stability of phytosterol linolenate obtained by direct esterification without solvent were studied in the paper. The results showed that the phytosterol linolenate possessed ideal physiochemical properties. The acid value and POV of phytosterol linolenate were 1.2 mg KOH/g and 0.56 meq/kg, respectively, the trans fatty acids content was less than 0.1%, the solubility in different plant oils was about 30%, and crystallization temperature was –27.7 ℃. The concentration of phytosterol linolenate in soybean oil, rapeseed oil, and flaxseed oil was less than 0.1%, 0.1% and 0.3%, respectively. The oxidation induction time of the oil increased with the increase of phytosterol linolenate concentration in the oil. Phytosterol linolenate could be applied to different forms of food, health products and pharmaceutical products as a functional food additive.
