摘要: 原花青素是在自然界分布最广泛的一类天然酚类化合物之一,在各种林木、药用植物和果蔬中广泛存在。原花青素具有多方面的保健功能,广泛用于日常饮食和疾病防治,具有较大的开发价值和应用前景。然而该类成分结构较复杂,分子量较大,提取过程中存在溶解性不好等问题,使其化学研究具有较大的挑战性。现有的原花青素分析方法大多是非选择性的,目前国际上尚无统一标准。本文从化学结构类型、分析方法、分离纯化和结构鉴定方法等角度出发,对原花青素的研究进展进行了综述,并分析了各种方法的优缺点,为原花青素的化学结构研究提供参考。

Abstract:

Proanthocyanidins (PAC) are the most widely distributed plant secondary metabolites in medicinal plants,fruits,and vegetables.Because of their broad spectrum of bioactivities and health benefits,PAC have been widely used in daily diet,and for preventing and curing diseases.Thus,they are worthy of further development and application.However,chemical studies on PAC present a great challenge due to their complex structures,higher molecular weights,and some problems during the extraction process,such as insolubility in water and organic solvents.So far,many techniques have been applied to the studies of PAC,without any specificity.Moreover,there is no standard method for the analysis of PAC.Herein,the research progress on analytical method of PAC is summarized,from the views of their chemical structures,methods of analysis,separation,purification,and structure determination,together with the assessment of advantages and disadvantages of each method,in order to provide a reference and promote the study of PAC.
