摘要: 研究了壳聚糖、羧甲基壳聚糖及3种羧甲基壳聚糖金属配合物(CMC-Cu、CMC-Co、CMC-Ag)的抗氧化活性,同时考察了金属离子含量对CMC-Cu配合物抗氧化活性的影响。结果表明:对羟自由基的清除能力依次为CMC-Cu>CMC-Co>CMC-Ag>羧甲基壳聚糖>壳聚糖,清除能力随着浓度的增大而增强;对超氧负离子自由基清除能力依次为CMC-Ag>CMC-Cu>CMC-Co>羧甲基壳聚糖>壳聚糖,清除能力随浓度的增加而增强;还原能力依次为CMC-Co>CMC-Ag>CMC-Cu>羧甲基壳聚糖>壳聚糖。Cu2+含量与CMC-Cu配合物的抗氧化活性有关。

Abstract: In this study,the antioxidant activities of carboxymethyl chitosan metal complexes were evaluated using hydroxyl free radical scavenging assay, superoxide anion free radical scavenging assay and reducing power assay.The results showed that all of the metal complexes exhibited the antioxidant activity in different levels.The order of carboxymethyl chitosan metal complex’s scavenging effect on hydroxyl free radical was CMC-Cu> CMC-Co>CMC-Ag> carboxymethyl chitosan > chitosan;the order carboxymethyl chitosan metal complex’s scavenging effect on superoxide anion free radical was CMC-Ag> CMC-Cu> CMC-Co>carboxymethyl chitosan > chitosan,and the order of carboxymethyl chitosan metal complex’s reducing power was CMC-Co> CMC-Ag> CMC-Cu> carboxymethyl chitosan > chitosan.The content of Cu2+ was related to antioxidant activity of CMC-Cu.
