Detection of main components and antioxidant activity of water-soluble polysaccharides in cherry nuts

Abstract:

Cherry nuts,as by-products of processing cherry,were always discarded.Main components of cherry nuts were analyzed.The water-soluble polysaccharides from cherry nuts were extracted by water soluble alcohol precipitation method,and then the antioxidant activity was evaluated in vitro.The results showed that the dry weight contents of the protein,lipid,total soluble saccharides,ash and Vc were 18.80±0.30 g/100 g,8.97±0.58 g/100 g,4.96±0.14 g/100 g,1.49±0.08 g/100 g and 27.55±0.99 mg/100 g,respectively.The water-soluble polysaccharides extraction had stable scavenging ability against 1,1-diphenyl-2-picrylhydrazyl radical (DPPH·),2,2′-azinobis- (3-ethylbenzthiazoline-6-sulphonate) radical (ABTS·) and hydroxyl radical (·OH).When the scavenging rates against DPPH·,ABTS·and·OH were 50%,the concentrations of water- soluble polysaccharides were 0.31,0.32 and 0.34 mg/mL,respectively.The cherry nuts had certain nutritional value and antioxidant function.This research provided theoretical basis for the further development and utilization of cherry nuts,processing waste into useful material.
