Analysis of the nutritional components in four species of Ribes fruit from Qinghai Plateau

Abstract:

In this paper,the content of major nutrients,such as total sugar,crude fat,crude protein,amino acids,vitamins and mineral elements in four species of Ribes fruit from Qinghai Plateau were determined with general chemical methods,which would provide theoretical basis for the developing and eating of Ribes resources in Qinghai.The results showed that there were abundant nutrients in the four species of Ribes fruit,but also some differences among different species.The fruit contains high sugar content,especially in R.odoratum and R.nigrum,which were up to 10%.The content of glutamic acid was the highest,aspartic acid was the second,and cysteine was the lowest,which was similar in the different species of the amino acids content.For vitamins in different species,the highest was β-carotene,which reached 128.57 mg/100 g in R.stenocarpum,followed the vitamin C,which reached 49.80 mg/100 g in R.nigrum,and the lowest was vitamin K1.They were also rich in K,Ca,P and Fe,and the K content in R.nigrum could reach 96.33 mg/100 g,but the content of non-essential mineral elements,such as Cd and Hg,were close to or beyond the limit standard of heavy metal elements in fruits.
