Optimization of Extraction Conditions of Pectin from Banana Cauloid Using Response Surface Methodology

Abstract: The cauloid of banana was used as material for the extraction of pectin.The extraction conditions,including pH,material-liquid ratio,extraction temperature and extraction time,were optimized through single factor tests and response surface methodology using the extraction yield of pectin as index.The experimental results revealed that the optimal extraction conditions of pectin from the cauloid of banana were:pH 1.9,material-liquid ratio (g:mL) of 1:40,extraction temperature of 79 ℃ and extraction time of 131 min.Under the optimized conditions,the extraction yield of pectin was 22.35%,the content of galacturonic acid was in accordance with the Chinese national standard.
