Abstract: Post-harvest fresh fruits were susceptible to infection and rot due to pathogenic microorganisms in the surrounding environment, especially fungi. The development of antifungal agent and fresh-keeping agent for fruits to reduce the rate of decay of fruits not only contributed to human health, but also reduced economic losses and waste of resources. The plant source fresh-keeping agent for fruits prepared from plant resources as fruits disease inhibitors had the advantages of safety, environmental friendliness, harmlessness or less toxicity to human, animal and other non-target organisms, and the field of fruit preservation was increasingly the focus of international research attention. This article summarized the major fruit diseases and symptoms,rot-causing fungi and suffering species of post-harvest fruits. The research of plant inhibiting these rot-inducing fungi were summarized, and provided a reference for the development of plant-source preservatives.
